Disable SMTP logins & reclaim mail.my.domain

I've been slogging through exim  & whm documentation all day and my brain is now mush...maybe someone here can help point me in the right direction.

I'd like to disable 'user' exim smtp logins (aka MUA logins) and repoint mail.my.domains to google (I'll just put in CNAME records)...but I don't want to interrupt our PHP scripts sending emails (thus I can't just kill exim). Specifically, where is the binding of exim to subdomains?

I'm guessing that I want to:
-change relaying criteria to local only (not sure the best way)
-edit my mail.* CNAME to point to google (my MX records already point there)
-edit my DNS zone templates to not automatically CNAME mail.*

Any help/tips/links to guides?
