I'm considering either the Shared Hosting, or a Cloud 768MB cPanel package, and I'm looking to host about 10 different domains.
I'm wondering how the domain are handing in the account. Do they each have their own FTP logins? Or when I login to my FTP account with my main domain name - that I would be setting up the hosting with - all the other domains are in that folder.
How does the domain/FTP system work on ASO??

I'll try to give you an answer. When you create an addon domain to host additional websites on your account, a folder is created in your public_html folder with the name of your domain name or a different name that you specify. A FTP account is created for each addon domain.
You can login to your main account using FTP and access the folders of all your addon domains. Basically like subfolders. It's a very simple process. public_html/addon1, public_html/addon2, etc.

For reference, I think having everything under "public_html" is optional. cPanel used to force you to do it, but as of cPanel 11 (IIRC) they had the sense to let you put it elsewhere. That means you can have ~/public_html for your main domain, then ~/addon1, ~/addon2, ~/customerdomain, etc for the addons, with whatever folder name you choose.
As billzo said, each addon does get its own FTP account that is limited to uploading to that site (and can have upload limits from what I remember), or your main cPanel account lets you get full FTP access to all of the folders in your account, including logs etc.
